Baby Back Ribs on the Smoker

Not so much a recipe, but instructions so I don’t forget how to do this.

  • Add rub to ribs and let marry at room temperature for 30 minutes.

  • Prepare smoker per manufacturer’s instructions, and bring to temp (225-250 degrees)

  • Cook ribs for ~2 hours

  • Remove ribs, brush on sauce and wrap ribs in either heavy duty foil or parchment paper and regular foil

  • Put ribs back on the smoker for 1.5-2 hours

  • Remove ribs from the smoker and peel back packet (carefully to maintain the crust and to also not burn yourself with steam)

  • If the ribs easily separate from one another, hey are done. If not, cook for 20-30 minutes more
