Baby Back Ribs on the Smoker
Not so much a recipe, but instructions so I don’t forget how to do this.
Add rub to ribs and let marry at room temperature for 30 minutes.
Prepare smoker per manufacturer’s instructions, and bring to temp (225-250 degrees)
Cook ribs for ~2 hours
Remove ribs, brush on sauce and wrap ribs in either heavy duty foil or parchment paper and regular foil
Put ribs back on the smoker for 1.5-2 hours
Remove ribs from the smoker and peel back packet (carefully to maintain the crust and to also not burn yourself with steam)
If the ribs easily separate from one another, hey are done. If not, cook for 20-30 minutes more
