Blender Popovers

Makes 10-12 popovers

Ingredients:

  • 1c flour

  • 1c whole milk

  • 1/2t salt

  • 3 large eggs, at room temperature

  • 2T unsalted butter, melted

Melted butter or vegetable spray for greasing the popover cups

Preheat the oven to 425 degrees. Butter or spray ten 1/2c muffin cups. Grease the top of the tin also. If you use muffin tins instead of real popover cups, you’ll need two 12-hole muffin tins because you’ll be filling every other muffin cup.

Pour all the ingredients into the container of a blender and whirl until smooth. You can also use a hand blender. Using a rubber spatula, scrape down the sides and check the bottom of the blender to make sure the ingredients have mixed and that you don’t have a floury mess.

Use 1/4c of batter for each cup. Bake, WITHOUT PEEKING, for 25 minutes, until the popovers are puffed and nicely browned. Turn the temperature down to 350 degrees and bake for another 15 minutes to help dry out the inside. The insides will always be a little doughy.

Serve while hot.
