Fast & Easy Pickles
I love making homemade pickles, and I love that I can have them fast and easy. I believe I got this recipe from Rachael Ray... not entirely sure. It's been a long time.
Ingredients:
1/2c white vinegar
1t mustard seed
1t salt
1 clove garlic, minced
1t dried dill
1 bay leaf
4 cucumbers, sliced
Over medium-high heat, heat vinegar, salt, mustard seed and garlic until it comes to a simmer. Toss dill, bay leaf and sliced cucumbers together in a heat proof bowl. Pour simmering liquid over cucumbers and stir evenly to coat.
Serve at room temperature, or chilled. Can eat right away, but the pickling effect is best after a few days in the refrigerator.
