Greek Salad

Ingredients:

  • 7T olive oil

  • 3T white or red wine vinegar

  • 1/4t dry mustard

  • Salt & Pepper

  • 2 heads romaine lettuce

  • 2 large ripe tomatoes, chopped

  • 1 cucumber, peeled and diced

  • 1 red onion, thinly sliced

  • 1 green bell pepper, seeded and cut into strips

  • 1/3c kalamata olive

  • 4 oz diced feta cheese

  • 2t chopped fresh oregano (or 1t dried)

Make the dressing by combining the first three ingredients in a screw top jar. Shake well. Taste the dressing and add salt and pepper to taste (shake again).

Place the lettuce leave in a salad bowl or on a platter. Arrange the rest of the ingredients over the lettuce. Drizzle some of the dressing on top and serve the rest alongside.
