Steak Tartare

Ingredients:

  • 12oz beef tenderloin

  • 2T drained capers

  • 2T dijon mustard

  • 1/3c minced red onion

  • 1/3c chopped fresh parsley

  • 1 egg yolk

  • worcestershire sauce, to taste

  • hot pepper sauce, to taste

  • salt, to taste

  • fresh ground black pepper, to taste

  • 4 slices GOOD bread, brushed with olive oil, seasoned with salt and lightly toasted

Finely chop the beef, season to taste with the worcestershire sauce, hot pepper sauce, salt and pepper. Mix in the egg yolk, capers, mustard, red onion and parsley. CHILL.

Serve with toast points.
