The World’s Best Oatmeal Raisin Cookies

Ingredients:

  • 12T butter, softened

  • 3/4c firmly packed light brown sugar

  • 2/3c white sugar

  • 1 large egg

  • 1t vanilla extract

  • 2c old fashioned rolled oats

  • 1 1/4c flour

  • 3/4t baking powder

  • 3/4t baking soda

  • 1/4t salt

  • sprinkle of cinnamon

  • 1 1/2c raisins

Preheat the oven to 375 degrees. Cream the butter and sugars with an electric mixer until light and fluffy, about 1 minute. Beat in the egg and vanilla until smooth.

Stir together the oats, flour, baking powder, baking soda, and salt in a medium bowl. Stir the dry ingredients into the batter until just combined. Stir in the raisins.

Drop the dough by heaping tablespoons onto 2 large baking sheets (ungreased), leaving 2” between each cookie.

Bake until the cookies are golden brown, 12-15 minutes. Cool cookies on baking sheets for several minutes and then transfer them to a rack to cool further.
