Amy’s Cheesecake

My dear friend Amy gave me this very simple cheesecake recipe. It was the first cheesecake I ever made.  If you want a standard, unfussy cheesecake that will turn out delicious, this is your recipe.

Ingredients:

  • 1c graham cracker crumbs

  • 1 1/3c sugar

  • 1/4c butter, melted, plus extra for pan

  • 4 8oz packages cream cheese, softened

  • 4 eggs

Heat oven to 325 degrees.  Butter sides and bottom of spring form pan.  Coat sides and bottom with a couple of tablespoons of graham cracker crumbs, saving any extras.  Mix rest of graham cracker crumbs (along with the extras) with the melted butter and press into crust on bottom of pan (also up the sides if you desire).  Bake for 10 minutes.

Beat cream cheese until smooth and creamy.  Gradually add the sugar until smooth.  Add eggs one at a time, mix on low speed until just incorporated.  Pour into crust and bake for 1 hour.
