Annie’s Should Be Famous Chili

This was one of the very first recipes that I curated on my own, and it is the only recipe I use for chili.  I use ground turkey to make it more diet friendly, but you can use whichever meat you choose.  I had a friend once use venison and he said it was amazing.  I wouldn't know, because he didn't share.

Ingredients:

  • 1lb ground turkey

  • 1c chopped onion

  • 1/2c chopped green bell pepper

  • 2 cloves garlic, minced

  • 3 shakes crushed red pepper

  • 1/2t salt

  • 1/4t pepper

  • 1.5t brown sugar

  • 3T chili powder

  • 1 28oz can crushed tomatoes

  • 1 14.5oz can diced tomatoes (juice and all)

  • 1c beef broth

  • 2 14oz cans red kidney beans, drained and rinsed

Brown turkey until no longer pink.  Add onions, green bell pepper, garlic, and crushed red pepper, and saute until tender.  Add seasonings, stir until blended.  Add beef broth, stir until blended.  Add all tomatoes, stir until blended.  Bring to a boil. Reduce heat and simmer for 1.5 hours.  Add beans and heat through for another 15 minutes.

Garnish with sour cream, chopped scallions and Mexican cheese blend.

You can up the heat with some hot sauce or jalapeno pepper.  This is a relatively mild recipe - you can feel a little kick from the heat, but it doesn't linger.
