Crockpot French Onion Soup

Ingredients:

  • 4 large onions, sliced

  • 2 T butter

  • 1 t sugar

  • 2 qt chicken broth

  • 1/4 c sherry

  • 2 sprigs fresh thyme

  • 1 1/2 t salt

  • Pepper to taste

  • 1 cup plain croutons

  • 8 oz gruyere cheese sliced (or swiss)

Place onions, butter, sugar and salt in the bottom of a 6 qt slow cooker. Cover and cook for 7 hours on high, or until onions are soft and brown.

Add broth, sherry, thyme sprigs and pepper. Cover, and cook on high for another hour.

Spoon into soup crocks, and top with croutons and then the cheese.

Broil until the cheese melts and browns slightly. DO NOT OVER BROIL!
